I decided to go ahead and bring back Meal Planning Monday posts since one of my 2016 goals was to start meal planning again, I thought this would be a great way to hold me accountable on a weekly basis.
Sunday- Dinner Out
We actually went to a family BBQ, it was fun and we all ate way too much
Tuesday- Veggie Quesadillas and Slow Cooker Refried Beans
I’m using Ezekiel 4:9 Sprouted Grain Tortillas with Monterey Jack Cheese and Zucchini, Yellow Squash, Mushrooms, and Peppers as the filling options with avocado and salsa on the side.
Thursday- Potato Soup
This sounds amazing and super easy! I’m loving Josh’s “lazy” approach and can’t wait to try it! I’m making a double batch so I can freeze the leftovers to use another time, perhaps when I’m feeling a little lazy and don’t feel like making dinner…
Friday- Quinoa Stuffed Squash
