Sweet Potato Nachos

A couple of weeks ago, in one of my Meal Planning posts, I shared I was making Sweet Potato Nachos and it turned out so good that I thought I would share how I made them.


2 Sweet Potatoes

1 can black beans, drained and rinsed

1 cup frozen corn, thawed

1 red bell pepper, diced

1 onion diced

3 cloves of garlic, diced

1 cup cooked chicken, shredded or diced

1 cup cheddar cheese, shredded


Start by evenly slicing a couple of sweet potatoes.


Spread them out on a baking sheet, drizzle with a little olive oil and sprinkle with salt and pepper then bake at 425* for 20-25 minutes, flipping them over half way though.


Take them out of the oven and add your toppings, I used black beans, corn, a red bell pepper, an onion, garlic, chicken and cheese.


Put it back in the oven until cheese is melted, 5-10 minutes.

Serve immediately.

This would also be amazing if you layered it in a casserole dish and I will probably try that next time!
