Happy Monday Friends! Sorry for the post being so late, we spent a quick weekend in Vegas and didn’t get home until late yesterday evening, by the time we unpacked and put Brynlee to bed, I was ready for bed myself, add in a toddler who doesn’t think she needs naps anymore and this has been my first free moment since we’ve been home.
This was our first vacation without Brynlee in a very, very long time and while we definitely missed her, it was a much needed break. We went with my husband’s family and we had so much fun! I’m not really all that into gambling, but I do enjoy playing Black Jack and Roulette while I’m in Vegas. My husband and I always set a certain dollar amount that we are willing to lose because lets face it, the odds aren’t really in your favor and once its gone then no more gambling for you, but this time I actually walked away a winner!!! Oh and you can tell that we had a lot of fun by the lack of pictures I took…
Brynlee spent the weekend at Grandma’s and had a blast. I’m pretty sure they were on the go having fun from the moment we dropped her off until the time we picked her up. My poor mom is exhausted! But it was great bonding for them and Brynlee hasn’t stopped talking about Grandma and Grandpa’s since.
She also got to spend some quality time with my niece and they are finally at the age where they play so well with each other. I’m so happy that they get to have moments like this! I want them to be close friends, but since we live a couple of hours away, they don’t always get to see each other that often.
Anyway, on to meal planning…
Since we were gone all weekend, I only had four days to plan for this week! Wa-hoo!!
Monday- BBQ Chicken Quinoa Casserole
This is a left over from last week, I didn’t end up making it, so since I already had the ingredients, I went ahead and moved it to this week.
Tuesday- Slow Cooker Refried Bean Tacos
Wednesday- 20 Minute Pork and Veggie Stir Fry
Thursday- Sweet Potato Nachos
And just a few things that I’ll be doing this week to make it a little easier on myself during the week night scramble: when I made the BBQ Chicken Quinoa Casserole today I made extra chicken to use for the Sweet Potato Nachos and extra quinoa to use with the stir fry.
