Favorite Pumpkin Recipes

Baking with Brynlee is one of my absolute favorite things to do. We usually try to bake something at least once a week. She gets so excited when it’s time to pull her apron out and loves every step, from helping pull out all the ingredients, to measuring and cracking the eggs and of course, eating the fruits of our labor.

Luckily for me, she has inherited her mama’s love for all things pumpkin, so that’s been our theme for these last few weeks of baking. Today I thought I’d share with you some of my favorite pumpkin recipes and I’d love to see what yours are too, so please leave them in the comments.

First, did you know you can roast a whole pumpkin? I started doing this a few years ago to make my pumpkin puree and it’s really easy to do. I usually pick up a couple organic pie pumpkins in the beginning of the season, then after washing it, I put in on a baking sheet lined with parchment paper in a 425* oven for around 45 minutes or until its easily pierced with a knife. When it’s done, slice it in half, scoop out the seeds (make sure to save them to roast too) and the skin easily peels off. Cut it into chunks and throw it in a blender or food processor and blend until smooth. I store mine in ziplock bags either in the fridge or freezer depending on when I plan to use it. This works great for soup too! And of course if you don’t want to do this, canned pumpkin works just fine too!

Pumpkin Pancakes- I found this recipe the other day while looking for something to make for breakfast and it is so good!!! Definitely toddler approved and will be on repeat around here for the remainder of the season. This is a great “just add water” mix too!

Pumpkin Bread- Oh my goodness is this recipe delicious!!! It’s super easy to make and the bread comes out so moist and yummy. It makes 2 loaves and they go quick, like gone in 3 days! You MUST make this recipe! Add some chocolate chips for a fun chocolaty twist.

Homemade Pumpkin Spice Latte- I found this recipe last year and made it a ton! I like that the syrup can be made ahead of time and used over multiple days, so in the early mornings it’s not difficult to put together.

Pumpkin Pie- Hands down, my favorite dessert EVER!!! Growing up my mom would always make me my very own pumpkin pie each Thanksgiving and it was the best. I grew up on this recipe, but I always at least double the cinnamon and use my own pumpkin puree. And no pumpkin pie is complete without homemade whipped cream! And the PW’s pie crust is seriously the best!

Pumpkin Whoopie Pies- Oh my, these  are to die for! And their small size allows you to eat way too many! I make these multiple times throughout every year because they are always requested every where we go. Definitely give them a try!

Pumpkin Roll- If you need a recipe to take to an event this is a showstopper! And will be gone immediately!

Pumpkin Soup- I love Autumn soups and this soup hits the spot! So creamy and delicious, perfect for the chilly days ahead.

So, what am I missing? I’d love to find a good pumpkin pasta recipe to try. Let me know your favorites in the comments.
