Lunch Box Diaries Vol. 4

Happy Monday friends, I hope you all had a great weekend!

If you follow along on my stories, you already know I’ve reached an impasse with Brynlee in regards to lunch. She has been begging to buy the school’s “hot” lunch and we’d rather she didn’t. First of all, after reviewing the menu, I’m not sure she would actually like what they served and if she didn’t eat, I wouldn’t want her to be hungry the rest of the day. And second, I try really hard to provide Brynlee with healthy foods made with quality ingredients as much as possible, so I’m not fond of the idea of her eating the school’s highly processed lunch.

What I really think Brynlee wants is one of those “magic” cards that allows her to go up and buy her own lunch, I sent her with money to buy a chocolate milk to go with her packed lunch hoping that would work, but she still came home asking to have school lunch the next day.

I’m to the point where I think I might let her pick one day to try it out and hopefully she will come to the conclusion that she doesn’t want it herself. Otherwise, I had someone suggest letting her choose 2-3 meals per month to buy at school and bring lunch the rest of the time.

And now on to what I did pack last week for Brynlee’s lunch. I had to get kind of creative towards the end of the week trying to send lunches that were closer to what they served at school.

Monday: Yogurt Parfait, we like the Siggi’s brand vanilla yogurt. A Pumpkin Muffin, my kids have loved these! They have been great for a quick breakfast, snack time or to send in school lunches. I made a big batch and froze most of them to use when needed. Heating them in the microwave to 25-30 seconds thaws them perfectly. She also had Broccoli and for her snack popcorn.

Tuesday: Brynlee chose her lunch today, she really wanted a PB&J, our favorite bread is Dave’s Killer Bread. She also picked watermelon, pretzels and a yogurt stick. Her snack, freeze dried strawberries and bananas.

Wednesday: Chicken nuggets (today was the day she really started wanting school lunch). And for her side she wanted a yogurt parfait. We have half days on Wednesday, so no snacks.

Thursday:  Left-over pasta from dinner, I love this Thermos, I re-heated the pasta that morning and Brynlee said it was still warm at lunch. Watermelon and some Trail Mix. Snap Pea Crisps for her snack.

Friday: Brynlee would eat hot dogs every day if I let her… We always buy these hot dogs, she also had Cucumber slices and Cheddar Bunnies for her snack.

Resources for our lunch prep station:

From the top, lunch boxes are PBKids, Purple and Blue Bentgo (also here), Ziploc 3 compartment (I found them at Target for less, but wasn’t able to find them on target.com, I did find this similar one from Up & Up for the same price I paid),

I also bought pink forks and spoons for her lunches from Target to make it more fun! The square and heart food cups are great for breaking up larger compartments in the bento boxes. The napkins are all from the Target dollar bin, I pick them up whenever they go on clearance, again just something to make her lunches a little more fun.

Water Bottle- We love this PBK water bottle, it holds ice all day (which is saying something considering we’ve been under severe hear advisory for the whole first week of school). I also got the matching thermos, but haven’t had a chance to use it, it’s just been too hot!

Mini cups with lids– I purchased these on a whim at Target (again, I can’t find them on target.com, but they are next to the other food storage containers and much cheaper), but I am so glad I did! These are completely leak proof and work great for housing dips or other small snacks that you don’t want to be loose.

And lastly, not pictured are these small storage containers that I use for Brynlee’s snacks so they don’t get crushed in a plastic baggie and they have been the perfect size for a small afternoon snack.
